Dehydrated Raw Cauliflower “Popcorn”


I've seen a couple of recipes online for roasted cauliflower "popcorn." One actually showcased a small child holding a classic red and white striped popcorn vessel in his little hands with steamed cauliflower florets tossed in. Seems like a terrible trick to me.

It's like when you're browsing a magazine boasting healthy incentives like asparagus guacamole. I call bullshit, because that is asparagus purée. I know this because in a haze of curiosity, I tried it.

I will use quotations to their fullest today. This recipe isn't intended to replace movie theatre snacks, or give any false hope to the unfortunate souls who can't eat popcorn. Also, since I used seeds in the batter, any chance of classic popcorn flavour went out the window. But, it is a delicious alternative.

They may not puff up and melt in your mouth- but these little nuggets came out tasty, crunchy and incredibly addictive.

Dehydrated Raw Cauliflower "Popcorn" 

Ingredients 

1/2 cup sunflower seeds
1/4 cup nutritional yeast
1/4 tsp coarse ground sea salt (or pinch of regular salt)
1/2 cup veggie broth (TF, CF if necessary)
1 head of cauliflower

Directions      

Blend the sunflower seeds, nutritional yeast, salt and veggie broth together until you have a thick paste. Break cauliflower florets up into small bite-size pieces. Toss in the batter until evenly coated, and spread on dehydrating trays or cookie sheets if using your oven (I made these with a  dehydrator, but you can browse online for tips on using your oven for similar results). 

Dehydrate at 115 degrees Fahrenheit for 11-12 hours, until crispy.
